While goldfish are great fall back snack, the boys in my house enjoy variety!  We {all of us} LOVE Halfpops!  Air popped locally in Seattle, this super crunchy snack is perfect in the afternoon!  My favorite flavor is Butter & Pure Ocean Salt.  HELLO!  And they are made with all-natural ingredients.   Gluten free, nut free, no corn syrup, no artificial flavors, no hydrogenated oils, no preservatives.  Well, Halfpops are virtually health food!

Now that I will be watching four baseball games a week, I am going to stock up!  Moms need snacks, too.

HEARTY CHICKEN SALAD

My go-to afternoon snack as of late!  A Chicken Salad that satisfies.

In a medium size bowl mix:

1/2 of an apple {Honeycrisp are exceptionally good!}

1 stalk of celery {chopped}

1 small handful of walnuts {chopped}

6-8 oz of chicken breast {chopped}

1-2 tsp. Vegenaise {Mayo works too, of course}

Salt and Pepper to taste.

Serve alone OR with hearty crackers OR wrap in Boston Lettuce leaves.

{2 Ingredient} Oatmeal Cookie

Ok, the title is a little misleading.  The basic recipe to this “cookie” is two ingredients:  quick oats and bananas. And….they are called cookies for the lack of a better name.   With no added sugar or sweeteners, it is just like eating a bowl of oatmeal with mix-ins. The recipe for {2 ingredient} Oatmeal Cookies could not be more simple and easy to follow!  I have made these several times over the last couple of days and I have discovered that VERY ripe bananas and quick oats make the best cookie.  However, all the batches were good and I ate them all myself. [Note: These are great after school snacks, but even better mom-on-the-run snacks!]

Simply mash up 2 RIPE bananas, dump in 1 cup of quick oats, and your choice of mix-ins.  I threw in a handful of chopped walnuts and a handful of mini-chocolate chips.  Mix together.  Bake on a GREASED cookie sheet @350 for 10-12 minutes or until cookies are firm.

Quick breakfast, easy snack, late night dessert.  It all works!  Enjoy.

Where is June | After school snack

If history repeats itself, my boys will be ravenous after school next week.  I like to feed them hearty snacks, since most weeknights also include a practice or a game.  These pan fried ravioli are quick, easy and very filling.  I buy fresh, four cheese ravioli.  There are many varieties and any would work.  Heat a small amount of olive oil or butter and pan fry the pasta.  It usually takes 2-3 minutes per side.  [Turn when the pasta turns golden brown].  The finished product is crispy on the outside and easy to pick up.  Serve with marinara sauce.  Kids love to dip!

an after school snack: golden nugget mandarin

I may be late to the party, but we are loving the new Gold Nugget mandarin oranges in this house.  They are larger than your typical mandarin orange and look a bit odd with an extremely bumpy rind.  However, they are easy to peel and extremely sweet and juicy [plus no seeds].  Big W ate 3 in one sitting.

I will be serving up a Golden Nugget mandarin with cheese and cashews for a quick “fill-me-up” before a baseball game today at 5pm. 

Look for Golden Mandarins the next time you are in the supermarket.
